If you’ve ever eaten ice cream, you’ve probably picked up a Neapolitan at some point! But for the unaware, Neapolitan comprises of 3 separate flavours in one tub: vanilla, chocolate and strawberry, laid next to each other in stripes, a parent’s ultimate solution for fussy ice cream eaters at dinner!
Perhaps because it’s been a staple of supermarkets and corner shops for decades, there’s something distinctly nostalgic about Neapolitan ice cream, a reminder of childhood summers. With that in mind, this is your opportunity for a bite of nostalgia throughout the day, whenever and wherever you are! It’s also one of the quickest and easiest recipes ever! You’ll have the fudge ready to chill in 15 minutes or less, allowing you to get on with your day while dreaming of the gooey goodness back at home!

Neapolitan Fudge

If you want a taste of Neapolitan ice cream that you can take with you and sample anytime, then this is the recipe for you! Their distinctive look also make them ideal as a gift or to add to the top of a cake as decoration!

Ingredients

  • 397g (1 tin) condensed milk

  • 150g dark chocolate (54% cocoa)

  • 300g white chocolate

  • 2 tsp vanilla extract

  • 1.5 tsp strawberry milkshake powder

  • For decoration:
  • Hundreds and thousands (or any other sprinkles you fancy!)

  • Equipment:
  • An 8-inch square cake tin

Directions

  • Grease and line an 8" square cake tin.
  • For the chocolate fudge:
  • Finely chop the dark chocolate into small pieces.
  • If using a microwave, add the dark chocolate to a heatproof bowl with 130g of the condensed milk.
    Alternatively, add the dark chocolate and 130g condensed milk to a small saucepan instead.
  • If using a microwave, heat the mixture for 30 to 45 seconds, stirring at 15 second intervals until the chocolate has fully melted.
    Alternatively, place the saucepan over a low heat, stirring occasionally until the chocolate has fully melted.
  • Beat the mixture until it thickens up slightly, then pour it into the lined tin.
  • Place the tin in the fridge while you prepare the next lot of fudge!
  • For the vanilla fudge:
  • Finely chop 150g of the white chocolate into small pieces.
  • If using a microwave, add the white chocolate to a heatproof bowl with 130g of the condensed milk.
    Alternatively, add the white chocolate and 130g condensed milk to a small saucepan instead.
  • If using a microwave, heat the mixture for 30 to 45 seconds, stirring at 15 second intervals until the chocolate has fully melted.
    Alternatively, place the saucepan over a low heat, stirring occasionally until the chocolate has fully melted.
  • Add the vanilla extract to the mixture and beat until combined and the mixture thickens up slightly.
  • Pour the mixture into the tin on top of the chocolate fudge, gently smoothing out the vanilla fudge into a neat layer completely covering the chocolate fudge layer.
  • Place the tin in the fridge while you prepare the strawberry fudge!
  • For the strawberry fudge:
  • Finely chop 150g of the white chocolate into small pieces.
  • If using a microwave, add the white chocolate and strawberry milkshake powder to a heatproof bowl with 130g of the condensed milk.
    Alternatively, add the white chocolate, strawberry milkshake powder and 130g condensed milk to a small saucepan instead.
  • If using a microwave, heat the mixture for 30 to 45 seconds, stirring at 15 second intervals until the chocolate has fully melted.
    Alternatively, place the saucepan over a low heat, stirring occasionally until the chocolate has fully melted.
  • Beat the mixture until it thickens up slightly, then pour it into the lined tin over the vanilla fudge.
  • Pour the mixture into the tin on top of the vanilla fudge, gently smoothing out the strawberry fudge into a neat layer completely covering the vanilla fudge layer.
  • Scatter your hundreds and thousands over the fudge, covering enough of its surface so that each fudge square you cut later will have a scattering of sprinkles!
  • Place the tin in the fridge until the fudge has fully set, which may take around 2 - 3 hours.
  • Final stages:
  • Remove the tin from the fridge and, using a sharp knife, cut the fudge into even squares. Store in the fridge until ready to eat!

Stay Frosty!

As you stir your heated fudge mixture, it should begin to firm up pretty quickly to become quite viscous, flowing more like lava than a liquid! If your fudge mixture is looking a little runny, however, you can place it in the fridge until it firms a little, giving it a stir every minute or so to test it and ensure that the top of the fudge doesn't cool too quickly and solidify.

A Soft Scoop!

This recipe is so simple that the only other note I have for you is, when layering up your chocolate, vanilla and strawberry fudges, you want to take care to smooth each layer out very gently, so you don't merge your colours together. Until the fudge has hit the fridge for a while, it remains very soft, which is ideal for spreading it out into a neat layer with a smooth, unblemished top, but not so great when trying to use it as a foundation for more sugary greatness! Take your time, don't apply too much pressure and you'll be absolutely fine!
